We cream together butter/sugar and mix in melted Ghirardelli chocolate and vanilla. Then we beat in pasteurized eggs for a full 20 minutes until silky smooth. Finally we fold in freshly whipped cream, spread it inside our Oreo crumb crust, and top with more whipped cream and chocolate curls.
We use Granny Smith apples for their tart, complex flavor that combines with fresh ground nutmeg, allspice, cinnamon, vanilla, and rum to create an apple pie that has won over several friends who claim to have never liked apple pie before trying this one! Bring one home to bake today!

My name is Ben Neumann, and I am a professional baker. I was also a professional mixed martial artist (MMA fighter). Put the two together and you have possibly the most intimidating moniker in the fight game, Ben “The Baker” Neumann 🙂 I have been both baking and fighting since 2009, and it’s hard to say which one I love more. Good thing I don’t have to choose! It’s so hard to find a good pie the way my Grandma Neumann used to make them on the farm growing up, so I finally took matters into my own hands and began baking when I was in my early twenties. Now I am able to share the joy of homemade pie the same way my grandma shared that joy with me!
I used to offer my opponents a slice of pie at weigh-ins the day before a fight, and over the years all but one turned me down. They didn’t know what they were missing!
